This is another really simple soup recipe that uses just a few ingredients but is full of flavour and looks amazing. A great recipe to have up your sleeve! This was one of the first soups we had on the menu when we opened 3 years ago and it’s been on ever since!

You’ll Need:

A big pot, a couple of baking trays and a stick blender. If you don’t have a blender then a potato masher and a little patience will work just fine.

6 sweet potatoes (peeled and chopped into big chunks)

4 red peppers (stalks pulled out, halved and deseeded

2 red onions (peeled and quartered)

2 litres vegetable stock

Olive Oil

chilli flakes start with a pinch or two, you can add more later if you want to)

Salt & Pepper

This is what you do:

Get the oven on at 175c.

Put all the chopped veg on a big baking tray and drizzle with olive oil and a pinch or two of chilli flakes and roast until the potato is soft and the peppers are slightly charred. It’s hard to give a time as it’ll depend on how big your veg is!

Scoop the whole lot into a big pot and just cover with hot stock and blend till smooth. Add more stock till you get a consistency you like. We like ours really thick. Have a taste and season and add chilli flakes.

It’s as simple as that!

Handy Hints:

If you don’t want to peel the potatoes, then just wash them and prick with a fork then bake them whole until soft. Do the other veg as per the recipe but put it on a separate baking tray as it will take less time than the potatoes.

When the potaoes are done cut a slit lengthways across the top of them and allow to cool. I have asbestos hands so don’t have to wait till they are cool! Next squeeze the flesh of the potatoes out of the skin. It should come away really easily. If the odd bit of skin sticks you can just peel it off with your fingers.

This soup is lovely served with a glug of coconut milk (about half a can) OR the juice and zest of a lime if your feeling a bit fancy but it’s really lovely just as it is!
